Ingredients

Marinade

  • 1/4 cup olive oil

  • 2 limes (juiced)

  • 1 orange (juiced)

  • 3 tbsp Swaggy Fiesta seasoning

  • 2 tsp soy sauce

  • 2 cups beef broth

  • 1 cup water

Fajitas

  • 2 ribeye steaks (premium preferred)

  • 1/2 red bell pepper (sliced)

  • 1/2 green bell pepper (sliced)

  • 1/2 orange bell pepper (sliced)

  • 1/2 onion (sliced)

  • 2 large serrano peppers (sliced)

  • 2 large garlic cloves (minced)

  • 3 tbsp Swaggy Fiesta seasoning

  • 2 tsp sea salt

  • 5 tbsp olive oil

  • 2 tbsp unsalted butter

Preparation

Step 1


To make the marinade for the steaks, combine the ingredients in a bowl and whisk them together. Place the steaks in a glass dish and pour the marinade over them, ensuring they are fully covered. Cover the dish with plastic wrap and refrigerate for at least 4 hours.



Step 2


Make sure to allow the steaks to reach room temperature before cooking. Preheat a griddle to a high temperature, ensuring it heats up completely for a few minutes. Drizzle 3 tbsp of olive oil onto the griddle. Sear one side of the steaks for approximately 5 minutes. Then, flip the steaks and cook the other side for another 5 minutes. Modify the cooking duration based on your preferred level of doneness. Once you switch off the heat, slice the steak, ensuring to cut against the grain.



Step 3


Using a different pan or section of the griddle, heat 2 tbsp of olive oil and sauté onions for approximately 3 minutes. Then, add the peppers and cook for an additional 3 minutes. Incorporate minced garlic, butter, and Swaggy Fiesta seasoning into the vegetables and cook for 1 minute. Finally, gently mix everything together using tongs.



Step 4


After that, delicately combine the vegetables and steak with tongs. Sprinkle the whole mixture with 1/4 tsp of sea salt. Present your fajitas in a family-style setting with warmed tortillas, guacamole, salsa, and sour cream, and savor the meal!
