About the Recipe
Quesadillas are a simple and adaptable meal that is sure to satisfy a variety of people. You have the option to replace the chicken with steak or shrimp for variety. To save time, you can utilize leftover chicken by shredding it and adding a sprinkle of Swaggy Fiesta seasoning to enhance the taste!

Ingredients
6 boneless skinless chicken thighs
2 cups shredded Mexican cheese
4-6 flour tortillas
1/2 onion (sliced)
2 jalapeno peppers (sliced)
3 tbsp Swaggy Fiesta seasoning
1 lime (juiced)
2 cloves of garlic (minced)
1/4 tsp sea salt
4-5 tbsp olive oil
3 tbsp butter
Preparation
Step 1
To get your chicken ready, wash and pat it dry with paper towels. Put the chicken in a Ziploc bag along with 2 tbsp of olive oil, lime juice, garlic, and Swaggy Fiesta seasoning, then mix thoroughly. Chill in the refrigerator for a minimum of one hour.
Step 2
Preheat your griddle or pan over medium heat. Pour approximately 3 tablespoons of olive oil into the pan and cook the chicken for around 4-5 minutes on one side. After that, turn the chicken over and cook for an additional 4-5 minutes. Ensure that the chicken is cooked completely. Remove the cooked chicken from the pan and slice it into strips.
Step 3
Heat an additional 1-2 tbsp in the pan over medium heat. Cook sliced onions and peppers for 2-3 minutes until they reach the desired level of softness. Then, add the cooked chicken strips to the pan and gently mix all ingredients using tongs. Take the pan off the heat.
Step 4
To start making your quesadilla, begin by melting a pat of butter in a pan over low heat and placing the tortilla in the pan. Sprinkle the desired amount of cheese on top and cover the pan with a lid to help the cheese melt. Make sure to monitor the tortilla to prevent burning while ensuring the cheese melts properly. Next, add the chicken mixture to one half of the tortilla and fold it over. Repeat these steps to prepare additional quesadillas.
Step 5
